does anyone have any nice, healthy meal recipes?
Does anyone know any really nice, healthy recipes for a whole meal? I want to make my boyfriend a nice meal but i've drawn a blank as to what to make for him...
Here is a good recipe for sesame chicken that tastes like takeout. I serve with brown rice and a veggie.
3 to 4 boneless chicken breasts - cut into 1 inch cubes
1/4 cup of honey
1/4 cup of soy sauce - low sodium
1/2 cup of water
1 teaspoon ground ginger
1 teaspoon red pepper flakes - optional
1 tablespoon corn starch
1 tablespoon toasted sesame seeds
Mix all ingredients except chicken and sesame seeds
Saute chicken in olive oil until cooked.
Add liquid and cool for about 5 minutes until thickened.
Sprinkle with the sesame seeds and enjoy!
I usually serve this with brown rice and brocolli.
Here is another for Maple Balsamic Chicken. One of my families favorites.
Maple Balsamic chicken
Brown boneless chicken breast (I usually do 3) in PAM or Olive oil. Sprinkle with thyme and paprika while browning.
Mix together the following:
1 can (13 or 14 oz.) of Fat free or low fat, low sodium Chicken broth
1/3 cup balsamic vinegar
1/3 cup maple syrup
dash of red pepper (if you like it spicy)
After browning add the liquid ingredients to pan with chicken and simmer until chicken is cooked all the way through - I usually do 30 minutes.
Remove chicken and whisk in 2 tables spoons of crunchy or regular peanut butter (recipe calls for crunchy). You can skip this but the sauce won't be as thick however you can thicken with a little cornstarch but the peanut butter really adds to the taste.
Serve sauce over chicken
